Laurie's Lasagne

I try lasagne recipes and I try lasagna recipes and they are just so-so. Of course my eye is always drawn to lasagne with some kind of interesting ingredient like sausage or asparagus or black beans. Or I slave over the sauce which I make from scratch. That said, our friend brought us a pan of the most basic and best tasting lasagna ever. And here it is.

Laurie's Lasagne

1 1/2 lbs hamburger lasagna noodles (I use Trader Joe's which are rectangular and you don't have to cook first). 3c cottage cheese 2 eggs beaten 1/4c Parmesan cheese (I use more) 1/4c mozzarella cheese (I use more) minced onions LARGE jar of Prego spaghetti sauce one time only pans

Brown meat w/spices - salt, pepper, garlic, and spices of your choice.

Add minced onions and the Prego sauce. Simmer.

Mix cottage cheese with the 2 beaten eggs and Parmesan.

Spray pan with Pam.

Create layers of meat, uncooked noodles, cottage cheese mix.

Top with meat and mozzarella.

TIP: Add 3/4c water around edges of pan before baking.

Bake covered for 30-40 minutes at 350 degrees.

Bake uncovered if the water needs to cook away. Do not over cook.

Let stand 15 minutes before cutting.

TIP: It is very easy to double this recipe. Give the second away or freeze it for a Winter's day.

NOTE: If you are making the frozen lasagne make sure it has thawed completely before heating.
