2 eggs 3 c cooked mashed sweet potatoes 1/2 c granulated sugar 1/4 c sweetened condensed milk 2/3 c butter - divided 1 t vanilla extract 1 c flaked coconut 1 c dark brown sugar 1/3 c flour
Preheat oven to 350 degrees. Grease 8 inch square dish.
Place eggs in a large bowl - beat well.
Add sweet potatoes, granulated sugar, condensed milk, 1/3 butter and vanilla. Mix well. Spoon into casserole.
Combine coconut, brown sugar, and remaining butter in a medium bowl. Stir with a fork until well blended. Sprinkle evenly over the sweet potatoes.
Bake uncovered for 35-45 minutes until the top is golden brown and knife inserted in the center comes out clean.
Let stand 15 minutes before serving. Serves 8-10.
